Second Day Meals: How are you dishing up your leftovers?

I think we can all agree that one of the many good things about Thanksgiving is the leftovers, but what do you do when you are tired of eating the same dish or it's a dish that just is not tasty reheated? You re-purpose them into another dish completely!
What do you do with leftover stuffing? Too busy Black Friday shopping to reuse your stuffing right away? Label and freeze it until you are ready to make some meatballs!
Then, when you need a quick and easy entrée, simply defrost the leftover stuffing. All you need is a blender/processor and a pound of ground meat and you can make really delicious meatballs to eat alone or serve in a soup.
